If you download the 6.1-Release ISO you can just install it from disc. If
you already have the system built you should be able to copy
/usr/share/examples/stable-supfile wherever you want and change the cvstag
to RELENG_6_1 (from RELENG_6) and just cvsup -L 2 /path/to/new/supfile -h
cvsup5.us.freebsd.org then just rebuild world and your kernel.
